Purple Pancakes

Made in the blender like a smoothie, these are healthy, whole wheat, sugar free and PURPLE! Fu-un!!! Topped with all sorts of delicious things, these were enjoyed by the whole family and easy to make.

(adapted from jamie Oliver’s recipe) 

Ingredients

  • 1 cup whole wheat self raising flour
  • 170 ml milk
  • 1 banana
  • 1 egg
  • 150g frozen mixed berries

Toppings

  • Natural plain Greek yogurt
  • Muesli
  • Honey
  • Maple syrup
  • Cinnamon
  • Icing sugar
  • Coconut flakes
  • Whipped cream
  • ANYTHING!!!

Method

Add all the ingredients into the blender and blend until smooth.

Heat a frying pan to medium high heat and Melt butter in the pan. Add the batter in any size you want. I did small, medium and large for family members.

Flip once the bottom is brown and slightly crispy. Cook same on opposite side. I felt like these took a little bit longer than refined sugar pancakes. Just keep an eye on them.

I had mine with Greek yogurt, Muesli and maple syrup. Omg. Delicious. My toddler ate them with a touch of honey. And even my cake-hating man loved them and he’s hard to impress.
